Perfect Grilled Trout

This is a delightfully simple way to get more healthy fish in your diet. This summer, fire up the grill and impress your family and friends with perfectly grilled trout every time. Over the years I have experimented with whatever herbs I have growing in the garden. A mix of parsley, rosemary, sage, thyme, lemon verbena, garlic chives are all wonderful additions. Or, keep it simple with the diced onion or chives as shown in the recipe below. Serves 4.


4 rainbow trout

2 tbsp. olive oil

1 teas. sea salt, or to taste

1/2 teas. fresh ground pepper

1 tbsp. fresh squeezed lemon juice

4 tbsp. diced onion or chives (optional)


Rinse trout. Remove heads (optional).

Preheat grill to searing temperature around 400 degrees.

Coat outside of trout with oil.

Sprinkle salt and pepper on inside of trout.

Add lemon juice inside of trout.

Add onion inside of trout, if desired.

Reduce grill heat to medium or 250 degrees and place trout on grill.

Trout cook quickly and should be flipped when grill side has just become white.

Trout are finished when all meat is white and flaky (don’t over cook).

Serve trout immediately.
